Perfect Christmas Cake That Kids Will Love

Holidays make me want to be more and more creative. I love designing cute cookies and cakes but I am not so good at creating the best sponge or cream. As much as I try it never turns out as the perfect buttercream I see on Pinterest, but Still I always try and try again.

I made this cute cake for work and It really wasa a big struggle with the white chocolate meringue buttercream. It didn’t turn out as it should have , plus it wasn’t enough to ice the cake too. So I whipped up some cream and finished the design.

Homemade fondant

I made the snowman out of marshmellow fondant I pre-made a few weeks ago. I used this recipe from mycupcakeaddiction.com and it’s really simple. You should try it too.

Gelatine Bubbles

They are so cute and easy to make. Everyone was so curious about what they were. I will try to make a bigger globe for a crystal snow ball for Christmas.You have the recipe below.

The fir tree is made out of a icecream cone and whipped cream. I didn’t want to add green dye to it because I wanted it all white.

The fondant snowflaxes are made with a push-cutter you can find almost anywhere.

So let’s see how the basic recipe is:

For the Red Velvet Cake

2 3/4 cups flour
1 1/2 cups  sugar
3/4 teaspoon baking soda
a pinch of salt
1/4 cup very hot water
2 tablespoons unsweetened cocoa powder
1 cup buttermilk
1 1/4 cups vegetable oil
2 large eggs, at room temperature
1 teaspoon vanilla extract
red food coloring

Preheat the oven and prepare two round cake pans with oil and dusted in flour.Whisk the flour, sugar, baking soda, salt and boiled water. Add cocoa and stir. Leave to cool.  In another bowl, whisk the eggs, vanilla extract and oil until smooth. Now add the food coloring to the buttercream and start adding it to the eggs composition. You should alternate the buttercream and flour mix for 3-4 times until fully incorporated. Now divide the batter in 2 and pour into the pans. Bake until  your toothpick will come out clean.

For the White Chocolate Icing

5 large egg whites
1 1/4 cups white sugar
1 pound butter, softened and cut in cubes
2 tsp. vanilla extract
1 1/2 cups white chocolate
Combine the eggs, sugar and salt into a heat-proof double boiler. Be sure the simmering water won’t touch the bowl at all. Heat it up and stir it until the sugar dissolved completely.Then immediately pour into your mixer bowl and mix until it cooled down. Meanwhile, you can melt the chocolate. Now add the butter, cube by cube. Don’t add another one until the first one is completely incorporated. Add the vanilla extract and then the melted chocolate. Mix until silky smooth. When I started Icing the cake, I added some cranberries over the icing so it will add some sweet sour taste to it.
Now the fun part begins.  It’s time to have fun and decorate your cake. I made it this way. How will you design yours?
