Healthy breakfast-quinoa pudding. Both yummy and easy to make!
I told you I published this book online more than a year ago and promised to translate it in English too, but never got the time. Now I will translate a recipe at a time here on the blog.This is the first one
Ingredients:
- 300gr Quinoa
- 20-30 gr goji berries
- 1-2 apples
- 200ml-almond milk
- 200-300 gr cranberries
- water
- cinnamon, cloves, ginger
- honey or agave syrup
Preparation:
Wash the quinoa 2-3 times , otherwise it will be bitter. Put it in a pot together with the almond milk(it should be double the volume of quinoa), and put it to boil.
Meanwhile, peel the apples and cut the in tiny cubes. Grate 2cm of fresh ginger and add them together with some cinnamon, cloves and goji berries to the boiling quinoa. Stir until it looks like boiled rice. Now take it off the stove, sweeten with honey or agave and add cranberries for serving.
