It’s Delicious and Healthy
I was really doubtful before I tried cooking it myself because it looked and it tasted like a carrot when raw. But then I first tried the puree version:
1.Peel the potatoes and cut them into cubes. Steam them until they are soft. Add some cardamon, turmeric, chilli, salt, pepper and a bit of greek yoghurt to taste. Serve while hot with some toasted tortillas. Easy and fast.You can even serve it as an appetizer dip.
The second recipe which I really love and I think you must try at least once, is the oven baked sweet potato.
I made it with spinach and curry sauce.
Ingredients:
- 4-5 sweet potatoes
- 1 handful of baby spinach
- 3 cloves of garlic
- Spices: caraway, chilly, salt, pepper, curry, nutmeg
- Honey
- Tomato sauce
- Yoghurt
- Palm oil
Peel and cut the potatoes. Wash the spinach very well.
Then peel the garlic cloves and crush them.
Add 3-4 spoons of palm oil, salt, pepper, 1 spoon of caraway and chilly to taste.
Get a tray, spray it with some Palm oil and then add the potatoes and spinach over. Spread the seasoning you just made and cover the tray with aluminium foil for around 10-15 min.
Take the foil off and leave them a bit more to get roasted.
Make the sauce in the meantime:
Take the big yoghurt and add the tomato sauce(preferably homemade without any sugar added).
Put some honey into it to make it a bit more sweeter, chilly flakes, salt and curry spice. Don’t forget the nutmeg because it gives it a really fine touch, I promise!
Take the potatoes out together with the spinach and serve while still hot together with the curry sauce.
Healthy and easy to make! You can also add some grated parmesan over the potatoes too.
