Christmas Cookies Ideas
I already started making my cookies list that I want to prepare for Christmas so if you haven’t decided yet, here are some ideas.
I will make these simple vanilla cupcakes, maybe even a batch with cocoa and surely the famous Chocolate Crackle Cookies I told you about.
So even if you are not such a great baker, you should try these two recipes because they are really really simple and the chances of screwing up are very low.
Vanilla Cupcake Recipe
1 1/2 cup flour
1 1/2 teaspoons baking soda and not baking powder
a pinch of salt
2 large eggs, at room temperature
2/3 cup sugar( brown)
1 1/2 sticks unsalted butter, melted
2 teaspoons pure vanilla extract
1/2 cup milk
Whick the flour, baking soda and salt in a bowl. In another bowl use the mixer and whip up the eggs and sugar until foamy. Gradually add the butter and vanilla. The add the flour in 2-3 rounds until you get a thick cream.
Line up a tray with cupcake papper and add the batter in(half full)
Bake until the toothpick comes out dry.
Whipped Cream Frosting with almond extract
Vegetable whipped cream
2 spoons of confectioners sugar and almond extract
Whip it up with a mixer and add the almond extract.
Add fondant snowflakes and some edible silver beads.
I also made some white chocolate meringue cream Santa hat cupcakes. So you can use the frosting recipe from here.
These cupcakes look so good, but I stopped eating them decades ago, I would take a cake though haha, xoxo BING.
